Vegan recipes for Lent. Eggplant with walnut sauce

I thought I would share some vegan recipes for Lent with you.



This is a Georgian  recipe. Eggplant (Aubergine) with walnut sauce.
8 small eggplants
1 cupful shelled walnuts
50g vegan margarine
2- 3 sprigs of Coriander
Garlic
Grape vinegar or pomegranate juice
Chilli Pepper
Salt to taste


Wash eggplants. Cut lengthwise into slices 1- 11/2 cm thick. Sprinkle with salt and fry in margarine.
Brown on  both sides. Crush nut meats or blend  with coriander and garlic.
Add salt, chilli pepper and grape vinegar or pomegranate juice to taste. Combine and stir in 2 cupfuls of chilled boiled water.
Arrange the fried eggplant in a platter and pour over the walnut sauce. Decorate with pomegranate seeds if available.
